Descriptionpipecolic acid betaine belongs to the class of organic compounds known as flavonoid-3-o-glycosides. These are phenolic compounds containing a flavonoid moiety which is O-glycosidically linked to carbohydrate moiety at the C3-position. pipecolic acid betaine has been detected, but not quantified in, several different foods, such as teffs (Eragrostis tef), triticales (X Triticosecale rimpaui), hard wheats (Triticum durum), amaranths (Amaranthus), and oriental wheats (Triticum turanicum). This could make pipecolic acid betaine a potential biomarker for the consumption of these foods. Based on a literature review a significant number of articles have been published on pipecolic acid betaine.
